James Beard Award–winning chef, author, and teacher Samin Nosrat has become a household name for her joyful, intuitive approach to cooking. In her groundbreaking book and show, she breaks down the four essential elements of good cooking—salt, fat, acid, and heat—and shows how to use them to transform any dish. Now, you’ll get to bring those principles to life in the kitchen!
We’ll start by building bold, tangy layers of flavor in Fattoush, a Middle Eastern-Style Panzanella made with juicy tomatoes, crisp cucumbers, fresh herbs, and toasted pita, all tossed in a zippy red wine vinaigrette. It's a fresh, crunchy introduction to the power of acid and texture.
Next, you’ll make Samin’s signature Persian-ish Rice with Tahdig—a simple but special dish featuring perfectly fluffy basmati rice with an irresistible golden crust. We’ll teach you what to do if the tahdig doesn’t quite behave (because Samin has your back!).
For the main event, we’re rolling up our sleeves to make juicy, saffron-scented Lamb Kufte Kebabs (lamb is the default, if you'd prefer beef, please let us know ahead of time so we can shop for it), seasoned with garlic, herbs, and warm spices. You’ll learn how to mix, shape, and sear (or grill) these flavorful little torpedoes to perfection.
To round it all out, we’ll whip up a cooling Persian Herb & Cucumber Yogurt Sauce—creamy, herby, nutty, and a little sweet with plump golden raisins. It’s the ideal counterbalance to the spiced lamb and rice.
