NEW CLASS! Date Night: Braised Short Rib Pappardelle & Lemon Mascarpone Mousse Masterclass
This is for all the lovers of hearty Italian comfort food — here is your chance to master a three course meal that feels both rustic and refined!
In this Braised Short Rib & Pappardelle Masterclass, you’ll dive into the art of braising: from browning tender short ribs to building layers of flavor with a sofrito in a rich red wine and tomato sauce to make a Braised Short Rib Ragu that is rich and unctuous and everything you want in a pasta sauce. Fresh Homemade and Hand-Cut Pappardelle is the perfect complement to this sauce.
To start the meal, you'll learn to transform simple summer squash into a more-than-the-sum-of-its-parts Charred Zucchini Salad. Marinated zucchini and summer squash are charred then tossed with fresh mozzarella, mint, and toasted sunflower seeds, all served with a bright white wine vinaigrette.
And for the finale, whip up a light yet indulgent Lemon Mascarpone Mousse, folding tangy whipped mascarpone with an airy cream, then plate it alongside Macerated Blackberries and Cookie Crumbs for a sweet-tart finish that really rounds out the meal.
