Date Night Homemade Ricotta & Pasta Cavatelli al Limone
The theme of this class should be "It's not as hard as you think". Making ricotta cheese from scratch takes less than an hour, 4 ingredients, and a little bit of patience. The cavatelli pasta requires even less time, only 3 ingredients, and a touch of technique. You'll be making a semolina dough from scratch, rolling it out, cutting it, then using a "rigagnocchi" or gnocchi board to make our cavatelli.
Our "al limone" sauce is about as simple as it gets, but when you use high quality ingredients like homemade pasta and fresh ricotta, it ends up being much greater than the sum of its parts. Served with a Seared Chicken Breast for some protein.
To taste the ricotta in all its glory we'll make some crostini, each topped with something different, but equally delicious. We'll have honey, olive oil, and balsamic to drizzle.

All sales are final. A minimum 48-hour notice via email (info@thelearningkitchen.com) is required for class rescheduling. A minimum 7-day notice via phone or in-person is required for class cancellations or rescheduling for reservation of four or more guests. If you are unable to attend a class, you are encouraged to send someone in your place. We cannot make exceptions.
Our recipes use common ingredients that may or may not be specified in the menu, including various fruits and vegetables, nuts, meats, spices, wheat flours, etc. If you have a food allergy or dietary restriction we should be aware of, please call or email before attending the class. We may or may not be able to accommodate.
