Thanksgiving in a Nutshell



In this class you'll learn how to prepare, roast and carve a Cornish hen which will give you the skills you'll use to impress your family and guests this Thanksgiving. You'll also make glazed carrots and learn the secret to creamy mashed potatoes and mouth-watering made from scratch gravy.  This is basically a Thanksgiving practice run.

While your Cornish hen is in the oven, Chef will teach you how to perfectly carve it and then you'll practice your newly learned carving skills on your own hen. By the end of class you'll have the confidence to tackle a turkey for Thanksgiving dinner!


You've got to have mashed potatoes, and were making an excellent rendition with buttermilk and you'll learn how to be sure they come out fluffy and full of flavor. Another technique you'll learn is "glazing", and that doesn't just mean pouring a sticky sweet sauce on top, we're doing the classic French method, which you can also use to glaze sweet potatoes, parsnips, and more!

Our recipes use common ingredients that may or may not be specified in the menu, including various fruits and vegetables, nuts, meats, spices, wheat flours, etc. If you have a food allergy or dietary restriction we should be aware of, please call or email before attending the class. We may or may not be able to accommodate.

All sales are final. A minimum 48-hour notice via email (info@thelearningkitchen.com) is required for class rescheduling. A minimum 7-day notice via phone or in-person is required for class cancellations or rescheduling for reservation of four or more guests. If you are unable to attend a class, you are encouraged to send someone in your place. We cannot make exceptions.
