NEW CLASS! Summer on a Plate

Chef Sam Wickham of Foxhole Farms is bringing down some of her fresh local produce to make three dishes centered around three stars of summer eating: fresh sweet corn, juicy tomatoes, and the versatile zucchini.  There's certainly no better time of year to eat this meal than right in the peak of summer harvest. Take advantage of the hard work of our local farmers and give their produce the respect it deserves with this meal.

Start off with a Charred and Raw Corn Salad that gives you the best of both worlds, fresh crunchy raw corn tossed with the deep caramelized charred flavors of grilled corn. Delightful. 

The second course brings the tomato into the game with perhaps the best use of raw tomato there is, the BLT sandwich, but not just any BLT; we're going to take it to the next level with homemade aioli and some extra additions (think avocado, fried eggs, microgreens). After you try homemade aioli and, with chef's instruction, realize how easy it is once you know the tricks to it, you'll be sad about all the years you wasted on store bought mayonnaise.

Finally, as a side for the ultimate sandwich, we're going to panko crust and shallow fry the zucchini just enough to take the raw edge off and leave all that fresh goodness inside.

Chef Instructor: Samantha Wickham

Chef Sam is a Dayton, Ohio native. She graduated from the Culinary Institute of America in Hyde Park, New York with a degree in Culinary Arts, and got her experience on the line in restaurants in New York and Washington D.C.  While working at Chef Dan Barber’s Blue Hill Restaurant, she fell for the farm to table concept and eventually for the lifestyle and vocation of farming. Sam has now been farming for 9 years with her husband Rich, who together own and run Foxhole Farm in Brookville, Ohio (along with their little girl Marion). They feed the Dayton community via Oakwood and Centerville farmers markets, Dorothy Lane Market, and various restaurants.  Sam also offers private chef services via her second business, Farmer to Table. Her culinary specialties include farm-to-table cooking, and Spanish, Italian, and French cuisine.  Teaching others how to cook is one of Sam’s favorite outlets.

Our recipes use common ingredients that may or may not be specified in the menu, including various fruits and vegetables, nuts, meats, spices, wheat flours, etc. If you have a food allergy or dietary restriction we should be aware of, please call or email before attending the class.
